What’s Cooking: Lemon Ricotta Pasta

I only tried one new recipe this week due to my new work schedule and making a mid-week trip to see a concert. I can honestly say that with my upcoming trip to Colombia and this new schedule I am not sure how many new meals I will try for the rest of July. BUT I did make a page that references all of my What’s Cooking posts so you can see them all together. I hope to provide you a detailed page listing all of the recipes at some point.

Scattered Thoughts Of A Crafty Mom Lemon Ricotta Pasta

Lemon Ricotta Pasta – What to do when you have leftover Ricotta from a prior week meal?  Off to Pinterest I go on a search for a recipe and found this pasta dish by blogger Scattered Thoughts Of A Crafty Mom.  Now let me tell you about my Little…she is not a fan of pasta with sauce so I usually just give her noodles and the veggies. (Trust me there are times I forget and have to beg/plead for her to eat).  This was an actually easy meal and I used cherry tomatoes rather than peppers AND I did not put crushed pepper flakes.  Big and I liked the pasta so it will be my go to when I have extra ricotta.  Give it a try.  (Family rating:  👍 👍 X)
