So even though we had busy week I was still able to fix a few new recipes.

With the fall season comes the ability to experiment with fall fruits/veggies like these apple and oat scones that I found on Baked By Rachel. They partnered with a frittata for brannier — one of my favorite meal times. We had enough to snack on the rest of the week which worked out great for our mad-rush breakfast today. I modified the recipe by not using cinnamon and I just spooned out the scones.

Due to my late afternoon classes I am trying to make a few crockpot meals like this Hawaiian Chicken by So Tasty So Yummy. The chicken was a hit with Big K but Little K was not in the mood for “sauce” on her chicken. I partnered it with some roasted potatoes and veggies, and I advise making sure going to be in the home while cooking (the sauce thickens quickly).

I made this a few weeks ago but realized never posted it. The girls like couscous so I thought I would experiment with a different variety — Israeli Couscous. I based the cheesy Israeli couscous off a recipe by Big Girls Small Kitchen and it was a success with the girls. Although not in the picture — I partnered it with some baked fish.
