Due to being busy with my oldest daughter’s theatre performance yesterday, I’m posting a Sunday edition of What’s Cooking. Unfortunately we didn’t stop at the farmer’s market since I wanted to make sure she got plenty of rest (they did two performances).

Baked Rigatoni with Meatballs – After the good response to Smitten Kitchen’s apple pancakes I thought I would try another recipe. This was a failure for it didn’t taste like I thought it would.. IT wasn’t the recipe but my error — I used vanilla flavored soy milk and vegetarian frozen meatballs. The dish had a very sweet taste to it which I assume was the milk. I will probably try the recipe again with different milk and a smaller amount so food doesn’t get wasted. I can say that when I’ve bombed recipes before something helped to eat it all and it just didn’t work this time 😦 Once again it was my fault not the recipe for I love me some Smitten Kitchen!!!

The August edition of All You magazine had a recipe for this burger and so I tried it out — SUCCESS — which was great after my failure at the pasta dish. So basically when you make your burgers you want to mold a hole to put shredded cheese and then seal the patty. I used ground turkey and shredded cheddar with some salt/pepper and dijon mustard to season the meat. The oven baked burgers were served with some oven baked fries and the yellow beans from the farmer’s market.

I actually made this recipe awhile back BUT never posted it. My daughters asked for so I was happy I could now post it. Can we say this Texas French Toast Bake is YUMMY and quite EASY, and it comes from blog Chew Out Loud. Due to little K having a cinnamon allergy I substituted brown sugar which makes it extra sweet. And since I typically have leftovers, I can say that it tastes good reheated the next day.

These bad boys are not a new recipe but a twist on a family favorite – taco bundles. I had extra bean mixture and egg roll wraps so thought I would experiment and worked great. The girls liked the spin on the bundles and were asking for more 🙂
