What’s Cooking: Pasta as Pizza

20120809-204234.jpgSo today was a recovery day from our early morning practice routines and yesterday’s mini-trip.  (Note – with school starting for the girls next week I’ve had them getting in the mode of waking up and getting ready as if going to school)  We just hung around the house and watched the Olympics and our Netflix movie – Mirror, Mirror.  Typically when we have movie night we also have pizza so found this as the perfect moment to try a recipe I saw in the Better Homes and Gardens Kid Favorites Made Healthy cookbook – Pasta Pizza(Page 123).

I deviated from the recipe for I used spaghetti sauce I had on hand(veggie style) rather than creating the sauce on the spot.  This was a HUGE success with my kiddos and I have to say quite tasty!  It allowed me to knock out their love of pizza and pasta in one meal.. which you can guarantee this will be repeated quite often.  Truly an easy dish to make and you don’t have to put the meat on there – I actually left half of it just sauce for myself and it still tasted good.

Here is MY version of the recipe

2 cups rainbow corkscrew pasta, cooking spray, 1/2 cup milk(I used  almond), 1 cup shredded pizza cheese, spaghetti sauce(used about full jar), turkey pepperoni, grated parmesan cheese

~ Coat your pizza pan with cooking spray (I used my glass pie pan) while cooking pasta

~ Drain, rinse with cold water, and drain again pasta

~ Make your crust by mixing pasta, egg, milk, half of the pizza cheese together

~ Spread crust mixture evenly in pizza pan and bake for 20 minutes at 350

~ Take crust out of oven, layer pepperoni, sauce, cheeses over the crust (in the stated order).

~ Bake for another 12 minutes or until cheese melted.

Serve as wedges using your pizza cutter.

While doing my research last night I found a few recipes that I’ll be trying primarily breakfast so be on the lookout for some interesting posts…
